Connecting a mouse and keyboard to an Xbox One is simple. Most wired or wireless USB keyboard and mice will work on Xbox One apart from Bluetooth connected devices — they can still be wireless, they will just need a dongle plugging into one of the console's USB ports. For wired connections, plug them straight into a free USB port. Your console will automatically recognise both devices, although you won't see a notification saying they have been connected. Although the mouse can not be used to navigate menus, the keyboard can. You can change the pointer speed and the primary and secondary mouse buttons in the Settings under Devices & Streaming and then selecting Mouse.
